Said to be the only authentic Hong Kong cocktail, this drink will appeal to the hungover and the homesick.

> half ginger beer

> half ginger ale or lemonade

> a slice of lemon

> two dashes of Angostura bitters

> lots of ice cubes

For a sip of the canonical, try the Captain’s Bar in the Mandarin Oriental Hotel, the bar of the RHKYC on Kellett Island or the ABC’s Waglan Bar. The Yacht Club’s brew is a light salmon pink, ABC’s a deep tangerine and as for the Mandarin’s, it is so bloody dark in that cavernous drink-hole I can never really tell.
